My inspiration for this recipe was to honor the Queen’s 70-year reign over the British monarchy, with this year being the Jubilee celebration.

These Banoffee Frozen Yogurt Cups are a healthier way to enjoy the iconic British dessert, banoffee pie. What is banoffee pie? A chef from Sussex, England is credited for inventing the delicious dessert made from bananas, cream, caramel and milk in a buttery crumbled biscuit or cookie base. The word “banoffee” is a combination of “banana” and “toffee” for the flavor that it exudes. If you ask me, it’s a very clever and glorious creation, yet it also exudes a lot of unwanted calories. Hence, I invented my healthier creation that embodies the same flavors in a layered frozen snack reminiscent of the classic British dessert.

This recipe is very simple, using fresh bananas, Lotus Biscoff Cookie crumbs, and dairy-free yogurt mixed with Nature’s Flavors Organic Caramel Flavor Syrup. Throw this frozen treat together in no time, freeze and pop out a few for some healthy snacking or to curb a sweet craving in a more nutritious, yet delicious way. This recipe makes 11 mini muffin-sized bites, (approximately 2 inches in diameter.)

Nature’s Flavors Organic Caramel Flavor Syrup is made with pure cane sugar and none of the artificial. It does not contain dextrose or high fructose corn syrup, which is a huge selling point for me, as I am highly sensitive to corn.

Ingredients:

Instructions:

Begin by processing the cookies into crumb size or place in a plastic baggie and crush with a rolling pin. Set aside for later use.

In a small bowl, mix together the yogurt and flavor syrup until well blended.

Set up your layering station and let the fun begin. No need to grease the muffin mold, (just in case you were wondering.)

Add a little less than 1 tablespoon of the yogurt mixture to each cup.

Add 1 teaspoon crumbs on top of the yogurt mixture and use back of spoon or clean fingers to gently press crumbs into the yogurt mixture.

Add a couple slices of banana in each cup on top of crumb mixture.

Add remaining yogurt mixture to each cup, filling to the top and smoothing to edge using the back of a spoon.

Garnish by sprinkling a few extra crumbs on top, if desired.

Place in freezer for at least 2-3 hours, then pop out and let thaw for 5 minutes before enjoying, or immediately transfer to a sealed container or baggie to freeze until ready to enjoy.

How long do frozen yogurt cups last? These Banoffee Frozen Yogurt Cups can safely be stored in freezer in a sealed airtight container for up to 2 months.

Enjoy!
