DIY Easter Chocolates
One of my favorite candy bars is a Take Five, which consists of peanuts, caramel, pretzels and peanut butter all covered in chocolate. That was the inspiration for these DIY Easter Chocolates. I found some fun Easter silicone molds to use but you can also just use a muffin tin with paper liners or any mold you might have. So, I made more of a smaller candy bar bite, perfect to gift giving (or enjoying yourself!) This recipe is very simple, yet impressive.
Blueberry Lavender Cupcakes

Arkansas Travelers Peanut Butter Cookies
This recipe for gluten-free Arkansas Travelers Peanut Butter Cookies was inspired by a few different things. The first time I discovered this recipe (in its original form) was in my grandmother’s very old recipe scrap book. I wanted to create a healthier version that was gluten-free with less sugar. These cookies are named after the MiLB baseball team out of Little Rock Arkansas, where my husband’s family is from.
Mocha Tortoni Cups
My dairy-free Mocha Tortoni Cups are made from eggs, gelatin and coffee, which makes this a low-fat version. Instead of using traditional paper cupcake liners, I decided to make dark chocolate cups to hold the delicious Tortoni's and even topped them off with a dairy-free whipped cream and made chocolate covered pretzel stir sticks for a fun garnish. These have a great mocha flavor thanks to JUST Coffee El Corazon blend.
