How to make a healthy ice cream using a blender that is dairy free, vegan and gluten free. Bright pink ice cream made with dragon fruit.

Add all ingredients to a high-powered blender or processor and pulse a few times, then blend on high for one minute or until smooth and well blended.

Note: I love my Ninja 3-in-1 system and use it all the time. It comes with three different attachments for all kinds of settings, even an ice cream maker setting.

Remove blade from blender or processor and scoop out sorbet mixture into cones or bowls and enjoy this thick and delicious frozen treat immediately.

The lovely shade of pink is created naturally from the dragon fruit (pink pitaya.)

What is pink pitaya dragon fruit and benefits?

Pink dragon fruit is a superfood that is now grown all over world in tropical regions, but indigenous to Central and South America.

Not only is it a strange and unusual looking fruit, but if you ever see how it grows (or Google it) you will see the plant looks pretty out-of-this-world! Dragon fruit grows on a small tree with weeping limbs that look like cacti. They actually call it a climbing cactus, or hylocereus. The taste and texture are like a happy marry of a kiwi and pear.

Benefits of pink pitaya dragon fruit and easy recipe for bubblegum sorbet.

Benefits of pink dragon fruit:

  • rich in antioxidants

  • it’s high in fiber and fat free

  • high in Vitamin C to strengthen immune system

  • contains prebiotics and help with food digestion

  • help with lowering blood sugar

  • It can help boost iron levels, (which can be particularly helpful for women during their mensuration period.)

Add gluten free, vegan sprinkles for an ice cream shop experience.

This sorbet is a money and time saver with an indulgent flavor and creamy texture or an expensive ice cream. Lots of healthy nutrients from the fruits in this sorbet also makes it a healthier choice over ice cream.

Enjoy!
