These Pineapple Teriyaki Meatballs are so simple to make, but impressive and delicious! So juicy and flavorful and effortlessly put together for a quick appetizer that everyone will enjoy. Just three ingredients is all you need and finishes in less than 20 minutes on the stovetop or simmer in a crockpot for a larger crowd and even less effort.

Carrot-Raisin Salad Cups

Fresh, healthy and delicious and effortlessly put together to enjoy. This Carrot Raisin Salad is my “copycat” version of Chik-fi-la’s. I was so sad to see their Carrot Raisin Salad removed from the menu, so I decided to recreate a dairy-free version.

Serving suggestion: Add Carrot Raisin Salad to plastic cups, placed in a tray of ice to stay chilled. Find the recipe HERE.

Jello Beach Cups

Luau Mini Cakes

These delicate looking Luau Mini Cakes are easier to make than you may think, especially with a little help from some silicone molds. Use any cake box mix flavor, crush some graham crackers, find some edible pearl sprinkles and order some molds to help with this elegant beach scene.

Ok, I know…boys come to Luau’s too….so enough with the pretty stuff, here’s a few fun “SHARK” themed ideas for fun! (Still kind of cute though!)

Shark Brownie Bites

These Shark Brownie Bites are the perfect size for a sweet treat at your annual Luau or Shark Week party. Using a shark fin ice mold, I created chocolate fins atop a round brownie with buttercream icing waves. You can easily achieve the same fun effect.

Shark Attack Drink

IMG_2440.JPG

This fun and quirky Shark Attack Drink was inspired by Shark Week, a 30 year+ tradition on the Discovery channel. Fascinated with all the amazing facts about the many shark species and their behavior, this drink is my nod to the dangerous, yet fascinating king of the sea, the SHARK.🦈

Shark Chum Cups

How fun are these Shark Chum Cups?!? No recipe needed, just add a little cocktail sauce to the bottom of some small plastic cups, then add your fully cooked, chilled cocktail shrimp.

A creative sign would add a lot to this, and serve in a tray of ice. Enjoy!

What a crowd-pleasing luau party dessert these Pina Colada bars are. All the flavors of the famous Caribbean Pina Colada tropical drink baked into a delicious bar.

These delicious Pina Colada Bars start off with a sugar cookie crust, then layered with rum-soaked pineapple and cherries, white chocolate, shredded coconut and sweetened condensed milk. Baked till golden brown, cooled and then cut into squares. These would make a great tropical dessert to take to a luau party or family get-together.

Instructions

  1. Drain pineapples and cherries, then add coconut rum to each, to cover. Let soak for at least 20-30 minutes.
  2. Drain pineapples and cherries. Add pineapple rings on top of crust, then place cherries in-between them.
  3. Next, evenly distribute coconut and white chocolate chips on top.
  4. Spoon or drizzle sweetened condensed milk over top, then bake at 350℉ for 24-28 minutes or until most of the coconut is slightly browned.
  5. Let cool completely in pan, then slice into bars and enjoy or store in an airtight container at room temperature for up to 5 days, refrigerate up to 10 days or freeze up to 3 months.

Notes

Store in an airtight container at room temperature for up to 5 days, refrigerate up to 10 days, or freeze up to 3 months.

You can omit the rum, if desired, but keep in mind that the alcohol will bake out, leaving only the flavor behind...so no need to worry!
