What a great summertime side dish (or anytime of the year!) So fresh, healthy and delicious and effortlessly put together to enjoy. This Carrot Raisin Salad is my “copycat” version of Chik-fi-la’s. I was so sad to see their Carrot Raisin Salad removed from the menu, years ago, replaced by Kale?!? How dare they!! The Carrot Raisin Salad was my favorite healthy side to get when I ordered their grilled chicken sandwich.

Oh well, I was forced to create an alternative and as it turned out, it was really a blessing in disguise. I could create a dairy-free version for a fraction of the cost and in my opinion, taste better…..gasp…no I didn’t! 😉 Well, I’ll let you be the judge.


Let’s begin!

Ingredients:

NOTE: If you substitute with regular yogurt, choose a coconut flavor for a great tropical note.

Instructions:

Start by soaking the raisins in the hot water for 5-10 minutes. Meanwhile, peel and grate your carrots into a large bowl.

Next, drain the raisins and add to your grated carrots, along with the pineapple and yogurt alternative.

Mix until evenly combined, then cover and refrigerate for at least one hour to enhance the flavors together. Serve cold.
