Dairy free recipe for strawberry shortcake smoothie made with fresh strawberries for spring or summer meal replacement.

I added a layer of milled flax seeds and dairy-free yogurt alternative to this one for a lovely presentation and a little extra nourishing boost to my morning.

April is the start of strawberry season in North Carolina, which inspired this flavorful creation. This dairy-free Strawberry Shortcake Smoothie is a delicious breakfast or snack that feels like a dessert. You can throw everything in your smoothie cup or blender and have a tasty meal replacement in less than five minutes. For a lovely presentation and a little added nutritious boost, add a layer of milled flax seeds and dairy-free yogurt alternative. (As shown in photo above.)

Sweet flavors of creamy vanilla, strawberry, and a touch of cake thanks to Nature’s Flavors Organic Cake Batter Flavor Concentrate. Their concentrates and flavor extracts are the best way to add a delicious and fun twist in your morning smoothie. They have a wide variety of flavors that are vegan, kosher, and gluten-free. If this cake batter flavor concentrate isn’t available in your area, substitute with 1/2 tsp of vanilla flavor extract.

Let’s begin!

Ingredients:

  • 1 heaping cup strawberries, fresh or frozen

  • 1/2 cup vanilla coconut yogurt alternative (I used SO Delicious unsweetened)

  • 1 tbsp PB2 powdered almond butter

  • 1 tbsp milled flax seeds

  • 3/4 cup unsweetened vanilla almond milk

  • 1 1/2 tsp raw honey (for a vegan smoothie, use maple syrup instead)

  • 1/8 tsp Nature’s Flavors Organic Cake Batter Flavor Concentrate.

  • 4-5 large ice cubes

Optional garnishes: Milled flax seeds, chopped strawberries and extra dairy-free yogurt alternative.

Instructions:

Add ingredients, in order, to a smoothie cup and blend using smoothie setting.

Alternatively, add all ingredients to a blender and pulse a few times, then blend on high for at least one minute, or until smooth.

Pour in your glass and add optional garnish and enjoy immediately. I added a dollop of dairy-free yogurts, some chopped fresh strawberries and a little sprinkle of milled flax seeds.

Do your part to help the environment by using paper or reusable straws! Small steps make a big difference.

Enjoy!
