Guinness Black Bean Brownies

Try this healthier version of brownies!

Give these Guinness Black Bean Brownies a try for a healthier brownie version. Packed with protein, folate and antioxidants that are great for improving gut health, heart health, controlling your appetite and more. These satisfying brownies are made with a creamy Guinness Stout which contains polyphenols which help protect against free radicals and reduce your risk of heart disease. Another great attribute to this Guinness stout is its ability to be a natural leavening agent in baking, which makes for a taller, heartier treat.

The creamy and delicious drizzle glaze represents the iconic creamy head when a fresh opened can of Guinness Stout is opened and poured into a drinking glass. It has a small amount of stout along with dairy-free milk and Nature’s Flavors dulce de leche Flavor Concentrate to give it the perfect accentuation for this decadently healthier brownie. (This glaze is totally optional, however…you’re missing out if you don’t go for it!)

Let’s begin!

Ingredients:

For Brownies:

  • One 15.5oz can of black beans

  • Guinness Stout, approximately 3/4 cup, see instructions below to explain)

  • 2 tbsp vegetable oil (or olive oil)

  • 1/4 tsp Nature’s Flavors dulce de leche Flavor Concentrate

  • One 18.3 oz package of fudge brownie mix (I used Betty Crocker “Fudge”)

  • 1/2 cup semi-sweet chocolate chips (I used organic and vegan by Simple Truth)

For the glaze drizzle:

Instructions:

Preheat oven to 350℉ / 176℃ and line an 8x8 baking pan with parchment paper, then spray with cooking spray.

Then rinse beans under cold water. Drain and return to can.

Add enough stout to cover the beans.

Add beans and beer to food processor or blender, then add oil and flavor concentrate.

Blend on puree setting for at least one minute.

In a large bowl, combine puree mixture and brownie mix with a spoon just until no dry mix is visible (do not overmix.)

Fold in chocolate chips.

Pour brownie batter into the prepared pan and bake on middle rack for 43-46 minutes, or until the middle rises to almost level with the outside of brownies.

Let cool in pan completely before slicing and adding the drizzle glaze (See instructions below.)

For Guinness Glaze:

Add all glaze ingredients to a small or medium bowl and mix with a fork until smooth and creamy.

Slice cooled brownies and then drizzle glaze over top, as thick or thin as you desire.

All the ingredients blend so wonderful together to make this healthier brownie seem sinfully decadent.

Pairs well with coffee, milk or a stout!
