Purple Sweet Potato Smoothie Bowl

Deliciously spooky purple sweet potato smoothie bowl just in time for healthy Halloween eating! Made with cooked purple sweet potatoes, blueberries, peaches along with a touch of honey, cherry juice and vanilla for a perfectly blended and very creamy smoothie full of nutritious benefits and packed with antioxidants. This purple sweet potato smoothie bowl is allergy friendly (gluten free, dairy free and vegan.) I wanted to add an extra spooky touch for the Halloween season by adding a garnish of frozen skulls made by blending together pink dragon fruit, bananas and a touch of almond milk and I also sprinkled with chopped dark chocolate, which is the perfect complement to this purple sweet potato smoothie. Makes approximately 15 ounces.


Let’s begin!

Ingredients:

  • 1 cup cooked purple sweet potatoes (click HERE for instructions on cooking)

  • 1 cup chopped peaches (or one whole peach, pit removed)

  • 1/3 cup blueberries

  • 1/2 cup 100% black cherry juice

  • 1/4 cup unsweetend vanilla almond milk

  • 1 tbsp raw honey (use maple syrup for vegan)

  • 1 tsp Origine organic vanilla extract

Instructions:

Add all ingredients to a smoothie cup or blender. Pulse a few times, then blend on high for one minute or until smooth and creamy.

Pour smoothie mixture into serving bowl and top with garnishes, if desired, and enjoy!
