I love finding ways to incorporate healthy bone broth into recipes and after a little experimenting, I created a dairy-free bone broth chicken gnocchi soup that is creamy, bright, delicious and full of protein and nutrients.

With just a few simple ingredients, including rotisserie chicken, fresh carrots and celery, and shallots, you can create a comforting and satisfying meal in no time. Skip the takeout and impress your friends and family with this delicious and nutritious recipe. Keep reading to learn how to make this mouthwatering soup that will warm you up from the inside out. Makes approximately 2 1/2 quarts for 4-6 hearty servings.

Chicken Gnocchi Soup Ingredients

  • 2 tbsp plant butter (I used Country Crock w/olive oil)

  • 2 medium shallots, peeled and thinly sliced (Can use one small yellow onion for a substitute)

  • 1/2 tsp garlic powder

  • 1/2 tsp dried thyme leaves

  • 1/2 tsp salt

  • 1/2 tsp ground black pepper

  • 2 1/2 cups chicken bone broth

  • 1 cup coconut milk (I used full fat, but you can substitute with a light version)

  • Juice from 1/2 of a large lemon

  • 1 rotisserie chicken, chopped (about 3 cups)

  • 1 cup chopped carrots

  • 1 cup chopped celery (about 3 stalks)

  • 1 (16oz) package potato gnocchi

Instructions

Prep your ingredients.

I recommend prepping your ingredients ahead of starting to cook. Chop your shallots, carrots, celery and chicken. Measure out your spices and add to one small cup or bowl. Measure out your liquids and stir together.

Adding spices to butter and shallots in a pot to caramelize the shallots for making the base of this bone broth chicken soup.

Add butter to large sauce pot and turn to medium-high heat. Add shallots and spices (garlic, thyme, salt and pepper.)

Stirring frequently, cook the shallots (or onions) until they turn translucent then brown slightly and very fragrant. This takes about 5-8 minutes.

Adding bone broth coconut milk and lemon juice to the base of homemade chicken gnocchi soup.

Carefully add bone broth, coconut milk and lemon juice and stir together.

Start cooking the gnocchi in another pot according to package directions (it’s super easy!)

Next, add celery, carrots and chicken to soup mixture. Stir, then bring to a boil. Reduce to a simmer and cook, uncovered, for 15 minutes or until carrots are tender.

Remove from heat and add cooked gnocchi. Soup is ready to serve immediately.

This easy to make chicken gnocchi bone broth soup is hearty and cozy for an simple dinner idea on a winter or chilly spring or fall day.

We enjoyed this soup with toasted baguette bread that was buttered with dairy free butter before toasting.

Don’t skip the fresh lemon juice! Lemon juice adds the perfect acidic balance and brightens the flavors for a delicious and cozy dinner experience.

Note: You can control the amount of gnocchi you want to add. I used a little more than half the package to reduce carbs, especially since we ate our soup with some bread. It’s all about balance!

NOTE: I am lactose intolerant, that is why I choose to create a dairy-free version, but if you would like to use real dairy ingredients you can (equal substitution amounts) however it may alter the nutritional values.
