Crockpot Chicken Barbeque

If you’re looking for a healthier way to enjoy barbeque, try swapping pork for chicken and make my easy Crockpot Chicken Barbeque. (Also would work with turkey breast.) With very little prep and a few minimal ingredients, you’ll have delicious home made barbeque you can serve on buns, or by itself with some sides. It also makes a perfect alternative for a rainy day BBQ. Another great idea, is adding it to a soup or stew for a wholesome and substantial cold weather meal.


Let’s begin!

Ingredients:

  • 2-3 lbs skinless, boneless chicken breast

  • 1 yellow onion, thick sliced

  • 1 cup of your favorite barbeque sauce

  • 1/2 cup water

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • 1/4 tsp each salt and pepper

Instructions

Mix together barbeque sauce and water in the bottom of crockpot.

Thickly slice your onion and place slices in sauce/water mixture in the bottom of crockpot.

Add chicken on top of sliced onions, then sprinkle with salt and pepper.

Next, evenly sprinkle the garlic powder and smoked paprika over top of the chicken.

Secure lid on crockpot and set on low for 8 hours, or if short on time, cook on high for 4-5 hours.

When done, chicken will still have juice around it. Do not remove any juice, proceed to next step.

Using two forks, shred chicken apart. (It will easily shred)

Turn crockpot to warm and leave in juice to continue simmering for at least 10-15 minutes to soak up juice, then it is ready to serve.

If you have leftovers, let completely cool, then place individual amounts in freezer safe containers for later use in soups and stews. Can freeze up to 6 months.

  5. Secure lid on crockpot and set on low for 8 hours, or if short on time, cook on high for 4-5 hours.
  6. After cooking time is over, use two forks to shred chicken apart. (Do not remove any juice from cooking)
  7. Turn crockpot to warm and leave in juice to continue simmering for at least 10-15 minutes to soak up juice, then it is ready to serve.
